Harvest:manual, with careful selection of grape bunches in September. Grapes are dehydrated in drying chambers over a 60 day period, at controlled temperature and humidity.

Soil:clay soil having a rich structure at greater depths.

Training system:horizontal (tendone) and vertical (spalliera).
